Peanut butter oatmeal cookies

Hello lovelies!! Can you believe it’s mid February already and all we can see and feel everywhere it’s the song “love’s in the air” with Valentine’s month everything is pink, flowers, chocolate and cute hearts :)

The good news is that we can have a great time whether we are by ourselves, with friends or significant others. Baking is for everyone and who doesn’t love cookies? If you want to make this for yourself, to share with friends or as a gift for someone special you can’t go wrong with some homemade cookies. Plus did I d mention that your house will smell amazing? You’re welcome ;)

This is a very easy and healthy recipe with no added sugar but nevertheless delicious and sweet. They are super easy to make with a few ingredients and a short baking time. So enough with the talk, let’s just get started!


INGREDIENTS:

  • 80 gr of oatmeal flour

  • 160 gr of crunchy peanut butter (unsweetened)

  • 1/2 cup of monk fruit sugar

  • 1 egg

  • 1 pinch of baking powder


DIRECTIONS:

  1. combine all the dry ingredients on a bowl

  2. then add the first 80 gr of peanut butter to incorporate into the mix

  3. after that add the remaining 80 gr of peanut butter into the mix (after mixing everything together take this change to taste the sweetness level and add more monk fruit sugar if needed)

  4. Last add your egg and mix until reaching a smooth paste consistency

  5. Divide your mass into 14 equal portions to make your cookies

  6. Bake on 350 degrees for 15 min

  7. Cool off before serving & enjoy!! 🫶🏻
