Single Serve Banana Bread
Hello Everyone! So I thought it was a good time to share a bread recipe on this blog, we need a good old classic banana bread but with the small twist of making it healthier and with no refined sugar added. With this single serve portion you can make it more often if you are craving a delicious warm just out of the oven bread but without sacrificing your health goals :)
What I love about banana bread is that you can make it for almost any occasion and it’s one of those recipes where you can mix it up a little with a few extra ingredients and tweak its flavor depending on what you’re craving that day. You can add some walnuts that not only it will give you that yummy nutty flavor but also that nice crunchy texture in every bite. Also let’s not forget about the classics chocolate chips (of course with no sugar added) there is something about the warmth of melted bits of chocolate with the moist banana bread that it’s just magic isn’t it? And if you’re not a chocolately person the is always the cinnamon raisin, I don’t know why but when there’s raisins involved a always picture a nice grandma that tries to keep you healthy by adding a bit of extra sweetness to a recipe but always with raisins lol
So this recipe will definitely come in handy because is super quick, easy and healthy and did I mention that there is no need to use oil or butter? but trust me is is just as delicious, so lets get right into it!
INGREDIENTS
For your dry ingredients we will keep it nice and simple:
Oatmeal flour 18gr: of course you are welcome to use any kind of flour that you prefer. I thought that oat flour is very easy to find and to have already in your pantry and of course it is an excellent choice if you are looking for a gluten free alternative plus I love versatile ingredients and oats just gives you so many possibilities. Not to mention that it is super easy to make, you don’t have to go to the store to buy specifically oat flour, you can just get your regular dry oatmeal at home and put your desired amount into the blender until it reaches the powder texture and voila you have your oat flour! just like that :)
Zero Calorie Sweetener Blend Brown 12 - 15 gr: it doesn’t have to be this specific sweetener any brown blend will work. You can use brown truvia, brown monk fruit sugar, brown swerve etc. Regardless of your choice I personally recommend that go for the brown one because it really gives that flavor enhancement to the banana.
Pinch of baking powder: this will help the bread to rise when being baked.
Cinnamon powder: this is optional you can absolutely have a delicious banana bread without the cinnamon but if you want some it really depends how much of the cinnamon you want to come through it’s one of those ingredients where you measure with your heart :) but for this specific recipe I used approximately I used .5 gr
For your wet ingredients is very straight forward:
One ripe banana: if it has brown spots bonus points for this one.
Egg whites 24 gr: of course you are welcomed to use one whole egg but since i really wanted to create a recipe on the low calorie end I decided to just use egg whites.
INSTRUCTIONS:
This step is optional, before smashing your banana cut and save a few thin slices to put on top at the end for a nice little decor :)
Combine your banana and egg whites and slowly add your dry ingredients until everything is incorporated.
Bake it for 25 minutes at 350 degrees Fahrenheit
Let it cool down before eating and enjoy!!
