Sweet Potato Cinnamon Latte the perfect welcome fall drink (no sugar added)

So fall is just around the corner and with that we have begun the best months of the year, the BER months: September, October, November and December. The deep orange hues and coffee brown tones puts you right in the fall mood to enjoy your favorite drinks. The setting is only just an excuse to drink a delicious latte but not to worry, because here we can drink indulgently and healthy with this no added sugar/lactose free recipe. What is the best part? that you can do it in your microwave and with instant coffee! So let’s get right into it and start with this recipe:

INGREDIENTS:

Sweet potato 70 gr: Sweet potato season is here! and with that the wonderful sweet mashed puree and something about this tuber goes particularly well with other ingredients such as cinnamon, brown sugar, marshmallows (hmmm getting carried away here lol) and many other flavors

Zero Calorie Sweetener Blend (brown) 20gr: Since our goal here is to reduce our amount of sugar intake, we will not use the traditional brown sugar. However, that does not mean that we will compromise on our flavors and with so many wonderful options out there, there is a brown sweetener blend that goes perfectly for this recipe. I use the H-E-B brand but there are many others out there that can also be used such as Brown Truvia, Brown Swerve, Brown Monk Fruit Sugar etc.

Cinnamon: This very aromatic spice that instantly transports you to your fall favorite memories has to be in this recipe.

Soy milk 140 ml: You my favorite vanilla unsweetened flavor soy milk with its thick rich texture makes a perfect combination for our latte and by the end of the frothing process the fluffy result is part of the whole latte experience.

Nescafe Gold Espresso 1 gr: I implement instant coffee for the making of an “espresso” since this one is of the easiest and budget friendly ways to enjoy and reinvent your coffee. You don’t need to break your piggy bank in order to enjoy a nice coffee drink just the way you like it. We will use half of an “espresso” for this particular recipe.

MATERIALS:

  • Microwave

  • Frother

  • Food scale


INSTRUCTIONS:

  1. Grab your medium to small sweet potato approximately 150 - 200 gr and wash it well and towel dry afterwards.

  2. Once clean grab a knife and make a few punctures not to deep to the sweet potato surface to help it cook better in the microwave, you can also make a few punctures with a fork.

  3. Put your sweet potato in the microwave for about 4 minutes depending on the size of your potato. I recommend increasing one minute at a time in case it needs extra time to soften.

  4. Very carefully (caution the sweet potato will be very hot) remove the sweet potato from the microwave and let it cool down for 10-15 minutes or until you can handle it without trouble.

  5. Cut your sweet potato into 3-4 slices and peel the pieces you will use for your latte. For this recipe you will need 70 grams for one serving/cup.

  6. Put your 70 grams of sweet potato into your cup and with the help of a spoon or fork smash it until you reach a puree consistency. After that sprinkle some cinnamon to your liking.

  7. Get your 100 ml of soy milk and place it in the microwave for 1 minute, after that pour your milk into your cup with the sweet potato puree and stir everything together.

  8. Prepare your instant half espresso shot with 2 oz of hot water and 1 gr of Nescafe Gold Espresso. Pour it into your cup and mix it again.

  9. This is the time to add your brown sweetener, you can add the 20 gr or to your personal taste. The warm mixture of your cup will help melt your sweetener into your drink making it nice and homogenous.

  10. Lastly get your last 40 ml of milk on a separate cup, warm it in the microwave, froth it while still warm to finally top it off onto your latte and voila!! Enjoy your homemade cinnamon sweet potato latte with no added sugar!
